My Favourite Rhubarb Loaf Recipe
Preheat oven to 350 degrees F.
Mix together in large bowl:
- 1 1/2 cup brown sugar
- 2 1/2 cup flour
- 1 tsp salt
- 1 tsp baking soda
Add 1 1/2 cups finely chopped rhubarb (I used 1 cup rhubarb and 1/2 cup strawberries).
In a separate bowl, mix together:
- 2/3 cup oil
- 1 egg
- 1 cup sour cream
- 1 tsp vanilla
Add liquid ingredients to dry ingredients all at once. Mix until just moist. Place in 2 greased loaf pans and sprinkle with topping:
- 1/4 cup brown sugar
- 1 tbsp melted butter
Bake for one hour. Enjoy!
What are your favourite things to make with rhubarb?
Years ago I made stepping stones from the rhubarb leaves, maybe if I get really motivated I’ll make some more and share them on the blog! Let me know if you think I should!
