Homemade pickles without the canning part…

If you LOVE pickles but don’t love canning or feel like you don’t have time for it, then this recipe is just for you! I absolutely love these frigerator pickles because they taste amazing, easy super quick to make, last months AND they are ready quickly too! 

This is a classic recipe that has been made for years and we got it from my Auntie Carol, so we’re calling it Auntie Carol’s Refrigerator Pickles.

My mom was over and she chopped the cucumber and onions and I did the brine. We whipped them up quicker than the time it’s taking me to add this blog post!

Auntie Carol’s Refrigerator Pickles

  • 3 English cucumbers
  • 3-4 medium white onion
  • 4 cups white vinegar
  • 2 cups white sugar
  • 2 tbsp pickling salt
  • 1 tsp celery seed
  • 1 tsp dry mustard
  • 1 tsp tumeric
  1. Slice cucumbers and onions and layer in glass jar quart jars (or larger glass jars). I doubled the recipe for my very large glass jar as shown in the photos.
  2. Mix the remaining ingredients together in a large pot and bring to a boil.
  3. Let cool 5 minutes then pour in the glass jar over the cucumber and onion layers.
  4. Stir or shake jar every day for 3-4 days, then eat and enjoy. Store in the fridge for up to 3 months.
